Grilled Tomatoes/Pomodori Gratinati

A delectable accompaniment to any meal, especially with fresh tomatoes from your garden or farmer's market.

Prep Time: 30 minutes
Cooking Time: 20 minutes
Serves: 4 - 6
Flameware: Rectangular Baker, Square Bakers

Ingredients

  • 4 Tomatoes
  • 8 Tbl breadcrumbs
  • 1 Tbl parsley, minced
  • 10 black olives, pitted
  • 1 Tbl capers (preserved in salt)
  • 1 garlic clove
  • Sugar, just a pinch
  • Olive oil
  • Salt & Pepper

Cooking Instructions

Preheat oven to 350°F/180°C

Wash the tomatoes and halve them with a horizontal cut.

Gently eliminate the seeds.

Prepare the breadcrumbs with minced olives, capers, garlic, parsley, salt, pepper and pinch of sugar.

Put a spoonful of the mixture in/on the tomatoes.

Drizzle some olive oil over the stuffed tomatoes.

Place into the pre-heated oven for 20 minutes.
